Our mature coconuts are harvested at 7-8 months when the water is still sweet but the meat has developed substantial thickness. Each heavy, oval-shaped nut contains about 500ml of refreshing water with subtle sweetness and 1-2cm of firm white meat ideal for scraping. The outer husk is carefully removed to reveal the hard brown shell while protecting the interior. Rich in medium-chain fatty acids and minerals like manganese and copper, every part is usable – water for drinking, meat for milk or oil, and shell for crafts.
